A population is all subjects (human or animal) that are being studied.  A sample is a group of subjects selected from a population.  A population would be every Basketball player in the NBA.  A sample would be the Portland Trailblazers (Go Blazers!).  You would use a sample instead of a population when the population is so large as to make it impossible to study everyone in the population, such as the entire population of the United States.  You could use a sample, say, of 100 random people of different ages from each state.
