Lean is integrated activities designed to achieve high volume and high-quality production using as little inventories of raw material and work-in-process. In other words, it is about using only what is necessary to accomplish the task, eliminate waste. In our chosen pizza business, lean can be beneficial to the service time. Fast service is a big part of a successful restaurant. However, the fast service needs to be quality service as well. So when looking at the as-is process, it is important to look at how to improve the service flow while improving the quality of the service flow as well. To try and improve service time at the pizza restaurant, I would look to a couple of the elements used in the Japanese culture, Quality at the source and JIT.
